What may I cook in the RÖMERTOPF®-claybaker?
As a basic principle the RÖMERTOPF®-roasting trays – within the assortments “Klassiker”, “Swing”, “Modern Look”, “Rustico” and “Jubiläum” – are all-purpose bricks.

In the RÖMERTOPF®-baker roast beef and roast pork as well as dishes with poultry, vegetables, noodle soufflé, soup etc. will succeed perfectly.

What do I have to do before any use? How long do I have to sponge the roasting tray?
Before any using the clay baker wants to be watered and sponged in cold water for 10 minutes. The porous clay will soak with water and changes colour to dark red. This storage of water will suffice for about 3 hours of cooking time with 180 or respectively 200 degrees of temperature in the oven.

Do I have to sponge the baker all over?
You may place cap and base part into one another in a place-saving way. Please cover with water. Alternatively you may sponge cap and base part under running water. If you do so, please dispense the water all over the clay surface.

Do I have to sponge the glazed base part too? If I have to, how should I do so?
Please sponge the base part in either case. The non-glazed outside surface will absorb wetness, which will attain inside the baker by the non-glazed edge of the inner surface.

How does the RÖMERTOPF®-clay baker work? What is the specific attribute of the RÖMERTOPF®-clay baker?
The RÖMERTOPF®-brick consists of elemental clay, which is intentionally manufactured in a porous texture. By this the clay can absorb water. In the hot oven it will spend this storage of water little by little and in the form of vapour and damp to the food, regulating its refining process.

You may dress your dishes all but without grease and cooking oil, but in a low-calorie and health-conscious method.

As the baker will not dehumidify the food at all, the dishes will remain sapful, aromatic und tasteful.

Why is the RÖMERTOPF®-brick manufactured with an interior glaze latterly?
For about 20 years yet each RÖMERTOPF®-baker has been manufactured with an interior glaze in the base part. It alleviates the cleaning process and keeps the delicious appearance of the tray after using.

This interior glaze will not impact the functionality of the tray or the result of the cooking process.

Is the glaze food safe?
Yes, RÖMERTOPF® Keramik GmbH assures food safety of this transparent glaze as well as food safety of any other used material.

May I also prepare fish in the standard RÖMERTOPF®?
As a matter of course you may also refine fish in the RÖMERTOPF®. We however approve to use a particular fish baker, because the elemental clay will in the long term absorb the intensive aroma of the fish dishes.

May I place the bricks into the dishwasher or even into the microwave?
All the RÖMERTOPF® products are suitable for baking ovens, microwaves and dishwashers.

What has to be noted when cleaning the clay baker?
We approve a conventional, balmy dishwashing detergent. Please wash the baker after cleaning thoroughly and yieldingly with clear water. Please air-dry it afterwards. Do not put the brick away or replace it into the cardboard box before it is dried completely.

What about the patina which will occur by frequent use?
By-and-by your clay baker will take on colour. This is an absolutely normative occurrence. The patina proves that your brick consists of pure elemental clay. You may eliminate the patina to a large extent by using a conventional balmy washing-up liquid and a brush.

How to effect a deep cleansing for my baker?
When the brick took on colour by frequent use, you may boil it out in the baking oven. Please apply lemon juice or vinegar and water and adjust 200 degrees for about 1 hour. Set up a lotion at a ratio of 1:3. Please wash with clear water afterwards and air-dry the tray thoroughly.

How to eliminate mildew?

Cooking time and cooking temperature?
As a rule the dishes will be cooked after 1,5 – 2,0 hours in the convection oven (180 – 200 degrees) or using top heat/bottom heat (200 – 220 degrees).

Is the RÖMERTOPF® baker also suitable for higher temperature?
RÖMERTÖPFE® tolerate very high temperature – it is important however to heat them up slowly in order to avoid thermal shock. Otherwise each baker tolerated about 1.040 degrees during its manufacturing. Consequently the heat of a baking oven will not be a problem.

On which level within the baking oven should I place the RÖMERTOPF®?
The roasting tray should be placed on a centric level. Heat will encircle it there in an optimal way.

May I place the baker on the bottom of the oven?
Yes, but pay attention to put the baker into the cold oven. It will warm up with the baking oven.

Should I place the brick into the cold or warm baking oven?
Please place the roasting brick into the cold oven at all times!

What happens when temperature changes fiercely?
Please avoid changing of temperature. The elemental clay of the roaster will not tolerate changing of temperature from hot to cold or cold to hot. We therefore approve to warm up any liquid before you add it to the cooking dish.

What to do after removal of the roaster from the oven?
Please take care of setting the baker on a folded towel or trivet of wood or cork. By this you will avoid abrupt cooling-down of the elemental clay.

May I reheat dishes or leftovers in the RÖMERTOPF® the following day?
You may reheat dishes the following day very well – just take care of sponging the cap of the tray for about 5 minutes.

Will vegetables keep “al dente” when I refine vegetables and meat concurrently?
You may add vegetables like potatoes, carrots, celery, paprika, cauliflower, cabbage turnip etc. etc. to the meat or poultry at the outset (but please cut into small pieces).

To keep vegetables like tomatoes (remove peel afore), courgette, varieties of cabbage etc. “al dente”, please add it later optionally.

Yes, please defrost deep-frozen ingredients afore completely.

May I modify ingredients, named in the RÖMERTOPF® cookery books and recipes?
As a rule all recipes, destined for 4 persons and respectively with a total serving of about 2,5 kg, are designed for 200 degrees cooking temperature and 1,5 hours cooking time. As a matter of course you may modify all recipes appropriate to requirement and gusto.

How to comprehend the listed cooking times?
As a rule the listed cooking times and temperatures are guidelines. You may increase or decrease times and temperatures appropriate to quantum and quality of the dishes.

Is it possible to repair a broken RÖMERTOPF® and is there a special adhesive?
Unfortunately you may not repair a broken baker. There is no food safe adhesive which will tolerate humidity and a temperature of 250 degrees or more in the baking oven.

Potatoe roaster



What may I cook in the potatoe baker?
This brick is suitable for the roasting of potatoes or chestnuts solely.

You may roast potatoes within its crunchy peel. The potatoes taste like potatoes wrapped in aluminium foil and roasted in coal fire. Serve up with dips and dressings you like.

In wintertime you may roast chestnuts in the potatoe roasting tray. Please score the chestnuts afore.

Do I have to sponge the potatoe roaster too?
As an exception within the assortment you need not sponge the potatoe roaster. It is the only RÖMERTOPF® which consists of fire resistant clay. By this the potatoe brick is suitable for the baking oven as well as for hotplates, charcoal and open flames.

This particular material cannot absorb and save water. If you sponge the baker yet, this will not be adverse.

As a matter of fact the potatoes will be roasted and broiled, but not refined by damp. So the refining process is different from the other RÖMERTOPF® baker.

What sorts of potatoes are the best ones for the potatoe brick? How to handle the baker?
Please stoke the baker up with about 2,0 kg midsize potatoes. Use floury potatoes predominantly. Wash the potatoes and stoke the tray up. Do not peel the potatoes!

Place the roaster into the baking oven. The potatoes will be all over roasted after 1,5 – 2.0 hours and with a temperature of 200 – 220 degrees. In the meantime please bucket the roaster about every half hour.

If you use the brick on hotplates or open flames, please bucket about every 15 minutes. By this the potatoes will not scorch. Pay attention that the roaster remains closed all over the cooking time.

The potatoes did not become mellow – what should I do?
We approve to use small or midsize floury potatoes.

As far as the potatoes did not grow mellow sufficiently, please increase the cooking time with the same temperature. Depending on the quality of the potatoes, the cooking time may vary materially. Waxy potatoes will need – depending on quality and consistency – explicit more time to be roasted.

How to clean the potatoe roaster?
If potatoes stick to the bottom of the tray, please fill up with water and steep. Please clean with brush or sponge afterwards and rinse the tray.

As far as the roaster took on colour on charcoal or open flames, we approve to use a conventional balmy dish liquid. Please rinse the tray afterwards thoroughly and yieldingly with clear water. Air-dry it after this. Do not put the roasting tray away or replace it into the cardboard box before it is dried completely.

By the way the potatoe roasting tray is safe for dishwashers.

Fish clay baker



How to refine fish in the RÖMERTOPF®- fish baker?
It will work perfectly!

As any other RÖMERTOPF®-roaster the fish tray has to be sponged for about 10 minutes before using.

Within the tray the fish dishes will refine slowly and in a gentle method. Vapour and damp surround the fish dishes and prevent drying-out. This is important, because fish contains only marginal portions of grease.

The fish will keep hold of all nutritive substances and full flavour. It will also keep hold of its original shape and will not degenerate.

May I refine fish dishes in a conventional RÖMERTOPF®-roasting tray too?
As a rule you may refine fish in each RÖMERTOPF®-roasting tray.

We however recommend a particular fish roasting tray to our customers who are enthusiasts of fish dishes. We provide our special tray, shaped like a fish, in a small version for 2 persons an a bigger version for 4 persons.

May I refine fish dishes in a conventional RÖMERTOPF®-roasting tray too?
As a rule you may refine fish in each RÖMERTOPF®-roasting tray.

We however recommend a particular fish roasting tray to our customers who are enthusiasts of fish dishes. We provide our special tray, shaped like a fish, in a small version for 2 persons an a bigger version for 4 persons.

Yes, but once again we recommend to refine the fish in the particular roasting tray, by reason that the clay will absorb the fish flavour.

Bread baking dishes



How to bake bread in a RÖMERTOF®-bread baking dish?
Please sponge the bread baking dish in water for 10 minutes. The clay will absorb and save the water and spend it to the dough by-and-by as vapour and damp, regulating the refining process. Dough and respectively bread will be moisturized in an optimal way. Your bread will taste explicitly more fresh, sapful and aromatic.

You may also store such a bread in an optimal way.

The RÖMERTOPF®-bread baking dishes are suitable for a 500 g-tin loaf and respectively 1000 g-round bread.

Should I also grease the bread baking dish?
Yes, please grease the bread baking dish after watering with butter, margarine or oil at all times. Subsequently please spread flour, breadcrumb, oat flakes, poppy seed, sesame, linseed or the like into the dish. By this you will be able to remove the bread from the dish best of all.
By the way this coated bread looks very decorative.

What to do if I cannot remove the bread from the greased and bestrewed baking dish?
Please overturn the warm baking dish, cover the bottom of the dish with a tepid moisturized towel and remove the bread by tapping with your plane hand.

You may also bake bread in the classic RÖMERTOPF®-baker. In this case please do not attach the cap of the tray. The bread will indeed get a very flat shape in these big trays.

Multifunctional baker



What are the advantages of the “multifunctional roasting tray”?
With this roasting tray you may team the typical attributes of the RÖMERTOPF® (refining by vapour and damp and the juice of the ingredients greaseless, low-calorie and health-concious) with trends of modern cuisine (timesaving, straightforward and spontaneous).

By its tight and round shape you may use this roasting tray in the baking oven as well as in the microwave.

The roasting tray is the perfect kitchenware for the cooking of small dishes or to warm up leftovers. You may place the round roasting tray in the refrigerator without problems.

You will have a tray for cooking, warming up and storing (solely in the refrigerator).

Chicken roaster - "Chicko"



How to use the RÖMERTOPF®-chicken roasting tray? Advantages of this tray?
Please wash and flavour the chicken or the small canard and place it on the ceramic head. By this the poultry will be stucked on the tray. The heat of the baking oven will surround the poultry. It will be perfect and crunchy all over after 1,5 hours with a temperature of 180 degrees. The hot ceramic head will also refine the poultry inside. The grease will run down into the drip pan. You will enjoy a sapful and at the same time fatless poultry. The oven remains clean. You may carve the poultry on the tray forthright.

Do I have to place the chicken roasting tray into the cold or hot baking oven?
At all times please pay attention to place “Chicko” into the cold baking oven. When removing the hot roaster from the oven please avoid abrupt changing of temperature. To do so place it on a folded towel or a wooden trivet.

Should I sponge the “Chicko” before using?
No, because this roasting tray is glazed all over and not able to absorb and save water. A refining process by vapour and damp is unnecessary, as you want to enjoy your poultry grilled, roasted and crunchy.
